　春休みがようやく終わりました。遊び癖の抜けるかな？今日は西麻布からお届けです


　先日　東京は西麻布にある　「分けとく山」　という日本料理店に行ってきました　

　　　　　　　　　　　
　　　　　　　　

　ミシュラン★★の店舗は、上品でありながら質素な雰囲気でしたね。　目的は食育。

　店主の野崎さんは多くの著書もあるかたで、独特の語り口でやんわりと「日本人たるもの」に
　ついてのお話をされました。

　　　　　　　　

　この日は「昆布」のあれこれをレクチャーしてもらいました。　知らないことばかりで勉強に！

　特に学んだことは　「良い素材を使うこと」　と　「使い方を間違わないこと」　でした。

　心の底から頷きました。。




　息子と一緒に出汁修行をしたのですが、、、　帰り道にせがまれました。

　「家に帰って　今日はアレにしよう。　早くアレを作ろう。　早く食べたくなっちゃったよ。」

　そうですね～　良い素材の日本人足るもの・・・　について学んだら、アレが欲しくなりますよ。

　この「いのちのお米」です。　

　農薬は化学肥料を一切使わずに、合鴨と一緒に育てたお米です。　そう　合鴨農法！！

　阿蘇山からの新鮮な水がそのまま流れ込む　「竹ノ原農園」で育ったお米です。
　平成元年から、無農薬基準を取り入れた安全の折り紙つき生産者なのだそうですよ～

　　　これこれ、息子が興味を持つはずです。

　あらゆることにこだわった合鴨農法米は、５キロを２０００袋しか作れない希少なお米です。

　そんなヒノヒカリを新鮮なまま真空パックで２キロお裾分けしてもらいましたぁぁぁ

　　　じゃ～ん　買ったばかりのお釜で浸水する事７時間。　じっくり炊き上げましたよ～～

　　　　　　　　　　

　甘くてしっかりとした粒のお米でした。　炊き上がりの香りもよく、味は何とも甘さが強い。
　次の日に冷えた時．．．　これも美味しくて、お釜も変えた関係もあり、ハッピーなお米でした。


　分けとく山でも習って来たように、日本人として素材を楽しみたいと思いました
