・American beef ＆ pork ♪♪

　先日「アメリカン・ミート料理教室」に参加しました。美味しくてためになるイベントでした。


　
　米国食肉輸出連合会に招待していただき　「アメリカン・ミート料理教室」　に参加しました。

　行った先はANAインターコンチネンタルホテル東京（赤坂）

　　　

　「行正り香さんに教わるかんたんアメリカン・ミート料理教室」　がとり行われました。

　ブロガー30名に対し、アメリカン・ミートの生産者の方も同数出席し、交互に座り親睦を深め
　ました。
　とても緊張しましたが、和やかなムードで終始進んで行きました。　

　まず、アメリカン・ミートの特長から学びました　

　　広大な大自然で、大豆やトウモロコシ等の栄養豊富な穀物で育てられているため
　　　　やわらかくてとてもジューシー！
　　　　　清潔でエアコンも完備した農場で育てられているのですって。
　　２週間のチルド輸送中に低温熟成されるから旨みが増し、さらに美味しさがアップ！
　　　　そして食卓にのぼる頃が一番の食べ頃に！
　　　　　船便で大切に輸送されるそう。　てっきりカッチコチの冷凍肉だと思っていたわぁ～
　　Farm & Table （農場から食卓まで）という理念のもと、出荷から加工まで、安全性を
　　　　厳しくチェック！　もちろん基準をクリアしたものだけが日本に届きます。

　　低脂肪・低カロリー、良質なたんぱく質、ビタミンなどが豊富でとてもヘルシー。
　　　　　国産に比べ、脂肪分がかなり少ないのでカロリーが低く、栄養価は高いことに注目

　では、なぜ良質なのに安く提供できるのでしょうね～　

　しっかり教わってきましたぞ。　まず肥料が安いからです！
　安い理由は、生産者の多くが、大豆やコーンなどの肥料も一緒に生産しているからなのです。
　そこに輸入コストや輸送費用がかからないから飼育コストが低いということ。

　なるほど！納得ですね。

　では、行正り香さんのクッキング　開始　

　　　

　行正さんは魅力的な方です。　料理家としてだけではなく人間的にも！という紹介がありました
　が、その通りなのでしょうね。
　温かい笑顔と、機転の利く対応を見ることができました。
　また、ご自分の持っている知識や知恵を分かりやすく伝えてくださいました。

　この日のメニューは
　　　
　アメリカン・ポーク
　　「塩麹ロースト」
　　「バックリブと豆のトマト煮」

　アメリカン・ビーフ
　　「１２０℃ローストビーフ」
　　「バターステーキ」　　

　　
　オーブンや圧力なべを使った料理を教えていただきましたが、時短の工夫や美味しい焼き方、
　そしてアレンジメニューなど　書きとめるのに必死でした

　要は、しっかりと塩を降ること！　肉は室温に戻して分厚いまま表面をこんがりと焼くこと！
　かな？

　特に「バターステーキ」は、焼いている最中に振舞ってくださいまして...

　　　こんな感じにまだワイン色しているわ
　これで十分食べ頃です。
　アメリカン・ビーフは脂が少ないので、しっかり焼いてしまうと硬くなるのです。
　この状態であればめっちゃ柔らかくて甘みも感じるのですよ。

　では　お待ちかねの試食タイムです　

　　　

　ステーキのピンク色がよくわかると思います。
　全て美味しかったのですが、eggの一番のお気に入りは　「塩麹ロースト」　ポークかなぁ
　適度な塩気と甘みが絶妙で、豚肉本来の美味しさが噛めば噛むほど出てくる感じ。
　覚えているうちに是非作らなくちゃ！

　テーブルをご一緒させていただいた　アメリカの生産者の方は。。。とてもフレンドリーでした。

　　　

　こちらからは、アメリカではビーフとポークではどちらの方が食卓によく出るのか？と質問。
　「どちらも多いけれど、やはりビーフ」とのお答えでした。

　逆に聞かれたことは、どんなテーマでブログを書いているのか？PVは？？　など。
　日本のブロガーにとても興味を持ってくださいました。

　いただきものもしてしまいました！

　ご自身のfarmの様子を熱心に語る様子を目の当たりにし、自信を持って生産していること
　が、ダイレクトに伝わってきました。

　これらをいただいて帰ってきました。
　早くも　eggはコストコに行き　お肉を調達しました。

　１４００ｇの大パッケージです。
　参考レシピには、かたまりだとポトフがお勧めで紹介されています。
　今回はこれしか買えませんでした。

　理由は............　調理する時間がないからなのです。

　今日から２泊３日で　那須に旅行に行ってきます～～～～～～～～～　

　帰ってきたら、またコストコに行って　サーロイン+リブロース+バックリブを購入する予定。
　作ったら　またレポしますね
