・あなたはどっち派？

　今回は「塩糀（こうじ）」のご紹介です。　ブームは落ち着き、定番調味料となりましたね～


　最近は、肉や魚の下味をつけるといったら　「塩糀」　を真っ先に選ぶくらい使っています。
　また、隠し味にも　「塩糀」　ですね。

　
　　　
　　　　　『プラス糀 生塩糀』（粒タイプ）と『プラス糀 生塩糀こしタイプ』

　２種類の塩糀は、ご存じマルコメの商品です。

　マルコメさんには毎度お世話になっております。
　塩糀のジャムもある位ですから、マルコメさんは気合いが入っていますね。

　今回の２種類は、粒派　or　こし派　　　の勝負でございます。　あんこのようですね　

　モニターのタイプは、キャップがついているのでとても使いやすいですね。
　それにビンに比べて無駄がない気がします。
　スリムなので冷蔵庫でも場所を取らないし、いいことづくしです


　では、使ってみましょう　　　といっても、あまりに簡単な和えものです。
　　　
イカをボイルし、キュウリと共にスライス
塩糀を大さじ１入れる
ビニール袋のまま揉んで、３０分ほど冷蔵庫へ

　　　
　はいはい～　イカときゅうりの和え物　完成

　あまりに簡単で笑ってしまいそうですね。
　火を入れずに塩糀を使ったので、「こし」タイプを使用しました。
　滑らかな舌触りで、それでも塩気を感じ、イカが柔らかくなり美味しかったです。



　では次に、いつも使っている「粒」タイプ

　アメブロで仲良くしていただいているうさぎさんに教えてもらったレシピで肉じゃがにトライ

　　豚肉に下味として塩糀を　⇒　半日漬けこむ
　　じゃがいも・しめじ・玉ねぎ・人参を切る
　　トマト水煮１缶、醤油・みりん・酒をそれぞれ大さじ１
　　　　　　　　　　　　　　　　　　　　　　　　と共に、野菜を１５分蓋をして蒸し煮する
　　　　　　　　　　　　　　　　　　　　　　野菜が柔らかくなったら豚肉を入れて火が通す

　　　トマト肉じゃが　完成

　ジャガイモがちょっと硬かったので、シリコン鍋に移してレンチンしたら、丁度良くなりました。
　うさぎさんはフレッシュトマトをお使いでした。
　eggは．．．　なかったので、ホール缶で。　今度は生で作ってみたいと思います。

　塩糀のおかげで、短時間で豚肉が劇的に柔らかく仕上がりました～～

　我が家の簡単カレーに塩糀を入れると、隠し味になります。
　まずは、肉に揉みこんでおき、次にルーの中にも入れちゃうんです。
　入れた方が、味にまとまりが出る気がします。
　一味違う...　でも塩糀だとは家族は気付きませんから。

　ニンニクもみじん切りも入っているので、細かい粒があっても全く気にならないから、こちらは
　是非「粒」タイプで。


　どちらが好みか？　eggは「こし」派かな？？

塩麹２回ほど作ってました。
麹がなかなか無くて、最近ぱったりやってなかったけど、また始めようかな！
キャベツの浅漬けとかうんとおいしくやるんですよね！

酒粕がすっごい苦手で奈良漬も苦手だから
あんなイメージだったら食べられないから(>_<)
