　今回は「塩糀」のご紹介です。手作りキットがあったのでラク～に作ることができました


　今年　話題沸騰中の　「塩糀」　　

　「しおこうじ」と読みます。　今さらながらですが...
　三男は届いたキットに喜んで、　「わーい　しおこうじだぁぁ」　と。
　横にいた長男は...　この字を読めなかったのです　「俺は理系だから・・・」　と弁明
　違うでしょ

　塩糀は単なるブームだとは思えません。これからの調味料として活躍していくことでしょう。
　それ位、味わいと風味が豊かで、更に食べものを軟らかくする効果があるのですからね～

　最初にブームが起こった時は品薄で・・　または店頭に並んでいてもかなり高価で・・・

　どうやって手を付けていいものやら．．．と思っていましたが、手作りできるのですよね～～
　まぁ　恐らく味噌より簡単な手順で　

　とはいっても、生活に欠かせないものではないので、とっかかりがありませんでした。

とてもシンプルですね～


　さて　　手作りの塩糀は．．．なんとたった１０日間程で出来ていしまいます。
　
　では行きますよ～～

　　　おっと三男の登場です
　　　　　　　そう！今回　塩糀を育てるのは息子の役目

　　　塩と糀を混ぜます

　　　水も加えて手で捏ねます
　　　　　　　　　　　水の量がポイントですよん

　　　容器にシールを貼って
　　　　自分流にカスタマイズした容器に塩糀を入れ直し．．．

　　　はい　１日目はまだまだ白くて粒が大きい
　　　　　　ふたに注目！丸が１０個あります
　　　１日目にチェックの意味のシールを添付

　　　これで４日目の様子です
　　　　　　　　だんだんトロミが付いてきていますよね～

　１日１回　１分間かき混ぜます。　これも基本は三男の役目でした。
　最初は面倒と感じていた息子も、かき混ぜることに慣れてきて楽しんでいましたね。
　ただ、３日間サッカー合宿で留守をしていた間はｅｇｇの出番でした。
　
　サッカーから帰って来た三男は、真っ先に「塩糀はどうなった」と聞いてきました。

　彼が帰って来た日は既に熟成していました　

　　　シールが９枚、　９日目で我が家は完了
　　夏場は１週間～１０日、冬は２週間らしいです

　　　この量で約１キロもあります。大量です
　　　　　　　今までは常温⇒冷蔵庫へ

　　　このとろみ加減と甘い香り～

　　　簡単なところで野菜和え

　火を通さなくても大丈夫なんです。　この先何にでも使えることでしょう。　
　冷凍庫保存なら１年も持つ位の発酵食品です～
